- 1 cup of store-bought crispy fried onions, roughly chopped
- Tortilla chips, for serving
Instructions
Step 1
Start by positioning an oven rack in the center of your oven, then set the temperature to 375°F so it's fully heated by the time your dip is ready to bake. While the oven warms up, grab a large mixing bowl and add the cream cheese, sour cream, BBQ sauce, and that tangy pickling liquid from the jar—give it a good stir until everything's smooth and combined. Now toss in the beans, corn, shredded gouda, and the white parts of the scallions, mixing until it's all evenly distributed and your mixture looks creamy and chunky in all the right ways.
Step 2
Grab your 12-inch cast-iron skillet (or any oven-safe pan) and heat it over medium-high along with a splash of oil. While that warms up, toss in your ground beef and bell peppers, breaking up the meat with your spoon as it starts to sizzle. Let it all cook for about 5 to 6 minutes, stirring occasionally, until the beef is no longer pink and the peppers have softened and started to caramelize at the edges. Once everything’s nicely browned, carefully tilt the pan to drain off excess grease, then sprinkle in your taco seasoning and give it a good stir until the meat is evenly coated. Take the skillet off the heat and set it aside while you move on to the next step.
Step 3
Add the cream cheese mixture to the cooked beef in your skillet, then stir until everything is fully combined and looks creamy. Smooth the top with your spatula, then shower it with shredded cheddar cheese — don’t be shy, cover every bit. Pop the skillet into a 350°F oven and bake for 20 to 25 minutes, or until the dip is bubbling around the edges and the cheese on top has melted into a golden crust.
Step 4
Preheat your oven to 375°F and let it fully warm while you prepare the baking dish. Give your dip a gentle stir to redistribute the layers, then pop it into the center rack. In about 15 to 20 minutes, you'll see the edges start to bubble and the top turn a rich golden brown — that's your cue it's ready. Let it rest for 5 minutes so it sets up just enough for scooping.
Step 5
Now sprinkle those chopped jalapeños evenly across the top — you want just enough heat peeking through without overwhelming the creamy layers beneath. Scatter the fried onions in a generous layer while the dip is still warm so they get perfectly crispy as they cool slightly. Thinly slice the green parts of the scallions and sprinkle them over everything for a fresh pop of color and mild onion flavor. Set out a big bowl of sturdy tortilla chips alongside so everyone can dig in while the dip is still wonderfully melty and the toppings stay crisp.

My Tip
Mix the cream cheese and sour cream really well before adding the BBQ sauce—it prevents lumpy pockets of cream cheese that won't melt evenly into that rich, smoky base.
Leftovers
Store leftover Baked Cowboy Dip in a shallow airtight container to help the flavors meld, and it'll keep nicely in the fridge for up to 3 days. When you're ready to dig back in, reheat it in the oven at 350°F until warmed through — this keeps the top from getting too bubbly or dried out.
Make It Your Own
Try swapping the cream cheese for Greek yogurt and using plant-based cheese shreds for a lighter, tangy twist that still delivers that creamy texture we all love.
