- 4 oz. Mozzarella, roughly grated (about ¾ cup)

Instructions
Step 1
Grab your largest skillet and warm those 2 tablespoons of olive oil over medium-high heat. While the pan heats up, grab your wooden spoon—we'll need it ready to break up that ground turkey as soon as it hits the pan. Once the oil shimmers, add your pound of turkey and start breaking it apart immediately; you want those pieces moving so they cook evenly. Let it sizzle for about 4 minutes, stirring occasionally, until it's mostly cooked through with just a hint of pink remaining—think of it as the turkey taking a quick bath in its own juices, getting nicely browned around the edges. Now grab your zucchini—those three medium ones you've already sliced into half-moons about ⅛ inch thick—and toss them right into the skillet along with your salt (whether you're using Diamond Crystal or Morton, just eyeball that 1½ teaspoons or 1 teaspoon respectively).
