- 500 grams frozen sweet potato pieces
- 2 cans (400g each) chickpeas, drained
- 2 cans (400g each) diced tomatoes
- 2 teaspoons chipotle paste
- A handful of fresh parsley, roughly chopped, with additional for garnish if desired

Step 1
Grab your largest skillet and set it over medium heat. While that warms up, give your onion a rough chop if you haven't already—we want it tender and golden, not mushy. Add a good glug of olive oil (about 2 tablespoons should do it), then toss in your onion and garlic purée. You'll know it's ready when the onion turns translucent and starts to caramelize at the edges, about 5 minutes of gentle sizzling. Give it a stir halfway through so nothing sticks, and don't worry if the garlic smells amazing—that's exactly what we want.
Step 2
Now grab your largest pot and add the remaining chickpeas, diced tomatoes (with their juice), vegetable broth, and that fragrant spice blend. Pour in 190ml of boiling water right from the kettle — it helps everything heat through evenly. Give it a good stir to combine, making sure the sweet potato cubes are mostly submerged. Season with a generous pinch of salt and freshly ground black pepper, then crank the heat to high. Once it's bubbling vigorously, reduce to a gentle simmer and let it bubble away for 25-30 minutes, stirring every now and then so nothing sticks to the bottom. You'll know it's ready when the sweet potatoes yield easily to a fork but still hold their shape. When it's thickened and cozy-looking, ladle it into four bowls and sprinkle with fresh parsley.
