Instructions
Step 1
To start making our Malteser tray bake, you'll need to melt together some essential ingredients. First, grab a small saucepan and place it over low heat on your stovetop. Now, add in your butter, chocolate, and syrup - you want to stir these gently until they're smooth and fully incorporated, which should take about 5 minutes, or until you notice the mixture has turned into a velvety, even blend. As you stir, keep an eye on the heat to ensure it doesn't get too high, and remove the saucepan from the heat once everything is melted and combined.
Step 2
Now it's time to add the fun bits to your Malteser tray bake. You'll want to start by crushing about 200g of biscuits - Digestives or similar work well - in a bowl until they're nicely broken down. Next, sprinkle these crushed biscuits evenly over the base of your tray, making sure to cover the entire surface. As you're doing this, you can also add your Maltesers - about 200g should do the trick - scattering them across the top of the biscuits, creating a fun, uneven layer that's just begging to be baked.
Step 3
Now it's time to bring your Malteser mixture together and get it ready for the fridge. First, give all the ingredients a good mix until they're well combined and you've got a smooth, creamy consistency. Next, grab your greased baking tin - make sure you've got a decent layer of butter or non-stick spray to prevent sticking - and pour your mixture into it. Pour it in evenly, then pop the tin into the fridge to chill until the mixture is set, which should take about 20-25 minutes, or until it's firm to the touch.
Step 4
Now it's time to add an extra layer of chocolatey goodness to your Malteser tray bake. To do this, you'll need to melt some additional chocolate - about 100-150g should do the trick. Place the chocolate in a double boiler or in a heatproof bowl set over a pot of simmering water, and stir occasionally until it's smooth and glossy. Once your chocolate is melted, pour it evenly over the top of your set tray bake and pop it back in the fridge to chill until the chocolate is set, which should take about 20-30 minutes, or until it's firm to the touch.

My Tip
When mixing the Maltesers into the chocolate mixture, gently fold them in to prevent crushing. This helps retain their signature texture.
Leftovers
To keep your Malteser tray bake fresh, store it in an airtight tin to maintain the crunch. Reheat a slice in the microwave for a few seconds to melt the chocolate.
Make It Your Own
Try swapping the digestive biscuits for gluten-free alternatives to make this Malteser tray bake more inclusive. Use gluten-free chocolate too.
