Instructions
Step 1
First, get that oven warming up to 375°F — we want it nice and hot for melting everything together later. While that heats up, grab your largest skillet and warm up a good glug of olive oil over medium heat. Toss in those bell peppers and onions, and let them soften up until they're just starting to turn golden and smell amazing, about 5 minutes. Give them a stir halfway through so they cook evenly, then scrape everything onto a plate and set it aside for now.
Step 2
Grab your largest half sheet pan and start arranging those tortillas! You'll want to lay 6 of them around the edges so about half of each one is hanging over the sides - this creates those crispy, golden edges we're after. Go ahead and pop that 7th tortilla right in the center to cover the whole pan completely, then it's time to build your masterpiece with that savory beef and veggie mixture, sprinkling the cheeses evenly over top and finishing with those fresh green onions.
Step 3
Now grab your second baking sheet and press it gently down on top of those folded tortillas – this little weight is what keeps everything compact while baking.
