Feta Wrapped in Phyllo: Golden, Crispy & Effortless
Feta Wrapped in Phyllo
Feta Wrapped in Phyllo
Ingredients
- 8 tbsp (½ cup) unsalted butter, melted
- 6 large (14 x 18-inch) sheets phyllo pastry, thawed if frozen
- 1 (12-oz) block Greek or Bulgarian feta, drained
- Kosher salt and freshly cracked black pepper
- Fresh thyme leaves
- Zest of fresh lemon
- Honey
- Toasted sesame seeds
Instructions
Step 1
Get your oven going at 425°F — that high heat is what gives us that shatteringly crisp phyllo later. Grab two sheet trays and line both with parchment; brush the first one lightly with melted butter, since that's where our finished parcels will bake. On the second tray, unroll your phyllo dough and immediately drape a damp paper towel over it — phyllo dries out fast, and you don't want crackly sheets when you're ready to wrap. Now for the feta: slice your block into six even pieces, each about ¼-inch thick. Keep them cold until you're ready to assemble — room-temperature feta gets too soft and slides around when you're working with the dough.
Step 2
Grab a clean, dry work surface — I like to use a large cutting board or my countertop — and lay one sheet of phyllo down flat. Using a pastry brush, spread a thin layer of melted butter all over the top, then sprinkle lightly with salt, pepper, dried thyme, and a little lemon zest. Place your block of feta in the bottom third of the sheet, about an inch up from the edge. Fold that bottom edge up and over the feta, brush the new top layer with more butter, then fold in both sides like you're wrapping a burrito. Roll it up snugly toward the top, tucking as you go, and set it seam-side down on your buttered baking tray. Brush the top with butter so it gets nice and golden. Keep going with the remaining five sheets, wiping your surface between each one so nothing sticks, and you'll have six tidy little parcels ready for the oven.
Step 3
Pull the phyllo-wrapped feta from the oven and admire that deep golden, shatteringly crisp exterior — you're looking for a rich amber color with darker edges where the butter has caramelized. While the parcels are still sizzling hot from the oven, drizzle them generously with honey, letting it pool around the base and seep into any cracks in the pastry. Immediately scatter a handful of sesame seeds over the top, pressing them gently so they stick to the sticky honey. Serve right away, while the contrast between the hot, crispy phyllo and the molten feta inside is at its peak.

My Tip
Don't wipe your work surface completely dry between packets — a tiny bit of leftover butter helps the next phyllo sheet grip and prevents it from sliding around while you're folding.
Leftovers
These phyllo-wrapped beauties are best eaten fresh, but if you have leftovers, tuck them into a shallow container with the lid slightly ajar so steam doesn't soften that gorgeous crust. They'll keep in the fridge for up to 3 days. Reheat on a baking sheet at 375°F for about 8 minutes until the phyllo shatters again under your fork.
Make It Your Own
Swap the feta for a mix of ricotta and crumbled goat cheese — you'll get the same salty tang but with a creamier, more spreadable center that holds together beautifully when you slice into it.
