- A medium-sized onion, diced into small pieces
- Two garlic cloves, finely chopped
- One pound of minced beef
- One teaspoon of powdered chili seasoning
- Half a teaspoon of cumin powder
- A pinch of kosher-style salt
- Coarsely ground black peppercorns
- A fifteen-ounce can of black beans, drained and rinsed with water
- One cup of cherry tomatoes, cut into half

- One cup of spicy red enchilada sauce
- One cup of grated cheddar cheese
- One cup of shredded Monterey Jack cheese
- A fourteen-ounce package of zucchini noodles
- Fresh cilantro leaves, chopped for use as a garnish
Instructions
Step 1
To start cooking your Burrito Zoodles, heat a large skillet over medium heat and add a splash of oil to the pan. As the oil warms up, add diced onions and let them cook until they're soft and translucent, which should take about 5 minutes - you'll know they're done when they've lost their crunch and are lightly caramelized. Next, add minced garlic to the skillet and cook for 1 minute, stirring constantly to prevent burning. Now it's time to add the ground beef, using a wooden spoon to break it up into small pieces as it cooks, and continue cooking until the beef is no longer pink, about 6 minutes, then drain the excess fat from the skillet.
Step 2
Now it's time to bring all the flavors together in your skillet. Put it back over medium heat and get ready to stir in those amazing spices - think cumin, chili powder, and a pinch of salt and pepper to taste. As you add in the beans, diced tomatoes, corn, enchilada sauce, and a blend of cheeses, you'll start to smell the magic happening. Next, let the mixture cook for about 5 minutes, stirring occasionally, until your cheese is melted and gooey - you'll know it's ready when it's smooth and creamy. Then, add in your zoodles and toss everything together to coat them in that delicious sauce. Cook for an additional 3 minutes, until your zoodles are well coated and heated through, and you'll be ready to serve up a tasty, cheesy burrito bowl.
Step 3
Now it's time to add the finishing touches to your Burrito Zoodles. To start, chop a handful of fresh cilantro leaves - you'll want about a tablespoon or so. Next, sprinkle the chopped cilantro over the top of your zoodles, making sure to cover the entire surface. As you step back to admire your handiwork, you should see a pop of green from the cilantro against the vibrant colors of your burrito filling - that's when you know it's ready to serve.

My Tip
When cooking the ground beef, break it up with a wooden spoon to ensure it distributes evenly. This helps the beef cook consistently, preventing chunky bits in your Burrito Zoodles.
Leftovers
Store Burrito Zoodles in a glass container to preserve flavors. Reheat in the microwave for a quick, easy meal.
Make It Your Own
Try swapping ground beef for ground turkey.
