Instructions

Step 1

To start cooking your Seafood Spaghetti, fill a large pot with salted water and bring it to a boil - we're talking a big, rolling boil here. Once you've got your water boiling, carefully add your spaghetti, making sure not to splash any water out of the pot. As your spaghetti cooks, stir it occasionally to prevent it from sticking together, and keep an eye on the time - you're aiming for it to be al dente, which should take around 8-10 minutes, or according to the package instructions. When it's done, drain your spaghetti in a colander and then return it to the pot, where it'll be waiting for the next step in our recipe.

Step 2

Now it's time to cook your shrimp to perfection. You'll start by melting 1 tablespoon of butter in a large skillet over medium heat - this will give you a nice, gentle sizzle. As the butter melts, add your shrimp to the skillet and sprinkle them with a pinch of salt and pepper to bring out their natural flavor. Cook the shrimp for about 2 minutes on each side, or until they turn opaque and start to curl up slightly, then remove them from the skillet and transfer them to a plate to wait for the next step.

Step 3

Now it's time to cook your scallops to perfection. You'll want to add the remaining 1 tablespoon of butter to the same skillet you used earlier, placing it over medium heat until the butter melts and starts to foam. Next, add your scallops to the skillet, sprinkling them with a pinch of salt and pepper to bring out their natural sweetness. As you cook the scallops for about 2 minutes per side, or until they're darkened to a beautiful golden brown on both sides, you'll know they're done when they feel firm to the touch and have a nice sear - then, transfer them to the same plate where you're holding your other ingredients.

Step 4

Now it's time to bring all the flavors together in your skillet. You'll want to keep the heat at medium, and add your diced shallot and minced garlic to the same skillet you used earlier - make sure to stir them occasionally as they cook for about 3 minutes, until they're softened and fragrant. As they reach this point, you can add in your canned tomatoes, broth, cream, grated Parmesan, and chopped parsley, seasoning with salt to taste. Next, let your mixture simmer for a few minutes, stirring every now and then, until it has thickened slightly - this should take around 3 minutes, and you'll notice the liquid has reduced a bit. Now, add your cooked shrimp and scallops back into the skillet, tossing them gently to combine with the sauce. Finally, squeeze in some fresh lemon juice to brighten the flavors, and then add your cooked spaghetti to the skillet, tossing everything together until the pasta is well coated in the creamy sauce. As you toss, make sure all the ingredients are well combined, and your seafood spaghetti is ready to be served.

Step 5

Now it's time to bring everything together and serve up your delicious Seafood Spaghetti. To start, grab some plates or shallow bowls and divide the pasta among them - you want a generous portion for each serving. As you're portioning out the pasta, take a moment to fluff it up with a fork, making sure the seafood and sauce are evenly distributed. Finally, sprinkle some extra Parmesan cheese over the top of each serving, followed by a sprinkle of fresh parsley - the bright green color will add a beautiful pop to your dish.

My Tip

When cooking the shrimp, make sure to not overcrowd the skillet. Cook them in batches if necessary, to ensure they sear nicely.

Leftovers

To store leftover Seafood Spaghetti, place it in a shallow glass container to prevent sogginess. Reheat gently in the microwave or on the stovetop over low heat.

Make It Your Own

Try swapping the shrimp for mussels.
